  1. Preheat oven to 425°F (220°C).
  2. Prepare Biscuits: In a large bowl, whisk together Biscuits ingredients (flour, baking powder, baking soda, salt). Cut in cold butter until mixture resembles coarse crumbs. Stir in buttermilk until just combined. Turn out onto a lightly floured surface and pat into a 1-inch thick circle. Cut out biscuits and place on a baking sheet. Bake for 12-15 minutes.
  3. Poach Eggs: Fill a saucepan with water and bring to a simmer. Add vinegar. Crack eggs one at a time into a small bowl, then gently slide into simmering water. Poach for 3-4 minutes, or until whites are set and yolks are runny. Remove with a slotted spoon and drain on paper towels.
  4. Make Hollandaise Sauce: In a heatproof bowl set over a pan of simmering water (double boiler), whisk together Egg Yolks and Lemon Juice until pale and thickened. Gradually whisk in Melted Butter until emulsified. Season with Cayenne Pepper and Salt.
  5. Assemble: Split Biscuits in half. Layer with Ham, poached Egg, and Hollandaise Sauce. Serve immediately.
