🎙️ Cook with voice coach- Preheat oven to 425°F (220°C).
- Prepare Biscuits: In a large bowl, whisk together Biscuits ingredients (flour, baking powder, baking soda, salt). Cut in cold butter until mixture resembles coarse crumbs. Stir in buttermilk until just combined. Turn out onto a lightly floured surface and pat into a 1-inch thick circle. Cut out biscuits and place on a baking sheet. Bake for 12-15 minutes.
- Poach Eggs: Fill a saucepan with water and bring to a simmer. Add vinegar. Crack eggs one at a time into a small bowl, then gently slide into simmering water. Poach for 3-4 minutes, or until whites are set and yolks are runny. Remove with a slotted spoon and drain on paper towels.
- Make Hollandaise Sauce: In a heatproof bowl set over a pan of simmering water (double boiler), whisk together Egg Yolks and Lemon Juice until pale and thickened. Gradually whisk in Melted Butter until emulsified. Season with Cayenne Pepper and Salt.
- Assemble: Split Biscuits in half. Layer with Ham, poached Egg, and Hollandaise Sauce. Serve immediately.
