1.5 lbs Boneless skinless chicken breasts
2 tbsp Soy sauce
1 tbsp Rice vinegar
1 tsp Cornstarch
1 cup Mango puree

Instructions
  1. Cut chicken breasts into 1-inch pieces.
  2. In a bowl, combine all Marinade ingredients. Add chicken and marinate for at least 15 minutes.
  3. In a separate bowl, whisk together all Sauce ingredients.
  4. Heat a large skillet or wok over medium-high heat. Add marinated chicken and cook until browned and cooked through, about 6-8 minutes.
  5. Pour Sauce over chicken and bring to a simmer. Cook for 2-3 minutes, or until sauce has thickened slightly.
  6. Garnish with Green onions and Sesame seeds. Serve immediately with rice.
