  1. Divide the Ground beef into two equal portions and form into balls.
  2. Cook the Bacon in a skillet over medium heat until crispy. Remove and set aside, reserving 1 tbsp of bacon fat.
  3. Heat the reserved bacon fat in a cast iron skillet or heavy-bottomed pan over medium-high heat.
  4. Place one ball of Ground beef in the hot skillet and smash it very thin using a spatula. Season with Salt and Black pepper.
  5. Cook for 2-3 minutes per side, until browned and cooked through. Repeat with the second ball of Ground beef.
  6. Butter one side of each slice of White bread.
  7. Place two slices of White bread, butter-side down, in a clean skillet over medium heat.
  8. Top each slice of bread with two slices of American cheese, one smashed patty, half of the sliced Onion, and four slices of Bacon.
  9. Top with the remaining slices of American cheese and the remaining slices of White bread, butter-side up.
  10. Cook for 2-3 minutes per side, or until the bread is golden brown and the cheese is melted and gooey.
