Instructions
- First, prepare the Dressing: In a small bowl, whisk together all Dressing ingredients until well combined.
- Next, prepare the Salad: In a large bowl, combine the chopped romaine lettuce, diced cucumber, diced tomato, thinly sliced red onion, chopped fresh mint, and chopped fresh parsley.
- Pour the dressing over the salad and toss gently to coat.
- Top with the toasted pita bread squares just before serving to prevent them from getting soggy.
