In a bowl, combine all Burger ingredients and mix well. Cook in a skillet over medium heat until browned, breaking it up with a spoon. Drain any excess grease.
While the beef is cooking, prepare the Cheese Sauce. In a saucepan, melt Butter over medium heat. Whisk in Flour and cook for 1 minute. Gradually whisk in Milk until smooth. Bring to a simmer, then reduce heat and stir in Cheddar Cheese until melted and smooth.
Place flatbread on a baking sheet. Spread the cooked Burger evenly over the flatbread.
Top with Kimchi and pour Cheese Sauce over the top.
Bake for 10-12 minutes, or until the cheese is bubbly and the flatbread is golden brown.
Garnish with Green onions and Sesame seeds before serving.
