🎙️ Cook with voice coach- Prepare the Rub: In a small bowl, combine all Rub ingredients.
- Prepare the Ribs: Remove the membrane from the back of the ribs. Rub the ribs generously with the Rub mixture.
- Marinate: Wrap the ribs tightly in plastic wrap and refrigerate for at least 2 hours, or preferably overnight.
- Prepare the Sauce: In a saucepan, combine all Sauce ingredients. Bring to a simmer over medium heat and cook for 10 minutes, stirring occasionally.
- Grill: Preheat grill to medium heat (around 350°F/175°C). Add mesquite wood chips to the grill for smoke flavor.
- Cook the Ribs: Place the ribs on the grill, bone-side down. Cook for 3-4 hours, flipping every 30-45 minutes and brushing with Sauce during the last hour of cooking. The ribs are done when the meat is tender and easily pulls away from the bone.
- Rest and Serve: Let the ribs rest for 10 minutes before cutting and serving.
