  1. Prepare the Rub: In a small bowl, combine all Rub ingredients.
  2. Prepare the Ribs: Remove the membrane from the back of the ribs. Rub the ribs generously with the Rub mixture.
  3. Marinate: Wrap the ribs tightly in plastic wrap and refrigerate for at least 2 hours, or preferably overnight.
  4. Prepare the Sauce: In a saucepan, combine all Sauce ingredients. Bring to a simmer over medium heat and cook for 10 minutes, stirring occasionally.
  5. Grill: Preheat grill to medium heat (around 350°F/175°C). Add mesquite wood chips to the grill for smoke flavor.
  6. Cook the Ribs: Place the ribs on the grill, bone-side down. Cook for 3-4 hours, flipping every 30-45 minutes and brushing with Sauce during the last hour of cooking. The ribs are done when the meat is tender and easily pulls away from the bone.
  7. Rest and Serve: Let the ribs rest for 10 minutes before cutting and serving.
